Description
Bahor Chunga Gahori is a traditional tribal dish from Assam, especially loved by Bodo, Mishing, and other indigenous communities. “Bahor” means bamboo, “Chunga” refers to the bamboo tube used in cooking, and “Gahori” means pork. This dish is a true celebration of nature and culture — pork slow-cooked inside a hollow bamboo tube over open firewood.
The pork is marinated with local herbs, garlic, ginger, green chilies, and sometimes bamboo shoot or sesame, then sealed inside fresh bamboo and roasted over flames. The bamboo infuses a unique, smoky aroma into the meat while retaining all its natural juices.
