For the Pigeon Curry
- 4 cleaned pigeons, cut into pieces
- 2 medium potatoes, peeled and halved
- 2 medium onions, finely chopped
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 2–3 green chillies, slit
- ½ teaspoon turmeric powder
- 1 teaspoon cumin powder
- ½ teaspoon coriander powder
- ½ teaspoon black pepper powder
- 1 bay leaf
- 2–3 green cardamoms
- 1 small cinnamon stick
- 2–3 tablespoons mustard oil
- Salt to taste
- 2–2½ cups warm water
- Fresh coriander leaves for garnish
👩🍳 How to Make Paro Mangxo
Step 1: Prepare the Pigeon Meat
Clean the pigeon pieces thoroughly and drain the excess water. Add turmeric and a little salt and mix well. Let the meat rest for about 10–15 minutes.
Step 2: Fry the Potatoes
Heat mustard oil in a heavy-bottomed pan. Once the oil is hot, lightly fry the potato pieces until they develop a golden colour.
Remove them and keep aside.
Step 3: Cook the Aromatics
In the same pan, add the bay leaf, cardamom and cinnamon.
Add the chopped onions and cook until they become soft and lightly golden. Add ginger paste and garlic paste and cook until the raw smell disappears.
Step 4: Add the Spices
Add turmeric, cumin powder, coriander powder, black pepper and salt.
Sprinkle a little water and cook the spices for 2–3 minutes until the oil begins to separate.
Step 5: Add the Pigeon Meat
Add the marinated pigeon pieces and mix thoroughly with the spice mixture.
Cook over medium heat for around 8–10 minutes, stirring occasionally. This process helps the meat absorb the flavours.
Step 6: Add Potatoes and Water
Return the fried potatoes to the pan. Add the warm water and slit green chillies.
Cover the pan and cook until the pigeon meat becomes tender and the potatoes are completely cooked.
Depending on the age and size of the pigeon, cooking time may vary.
Step 7: Finish the Curry
Check the seasoning and adjust the salt if necessary.
Allow the curry to simmer for another 3–5 minutes so the gravy becomes flavourful.
Turn off the heat and garnish with fresh coriander leaves.
